Couronne de Fontenay is a soft-ripened goat cheese from the Loire Valley of France. Loire Valley goat cheeses come in a variety of shapes and sizes, from pyramids to cylinders to the donut-like "couronne" or crown. 

Many people mistake the dark outer rind to be blue mold, but the dramatic color actually comes from vegetable ash! Ash was traditionally applied to the outside of the goat cheese to deter pests, but modern cheesemakers use it create the right pH for the rind to grow. The resulting cheese is fudgy and soft, with the lemony brightness from the goat milk grounded by the earthy peppery notes of the ashen rind. 

For accompaniments, what goes together grows together. If you can source a wine from the Loire, you're well on your way for a perfect pairing!
